Roasted Potatoes

Ingredients
*Potato - Baby Yukon Gold (Pacific Gold), 16 oz (Onions, raw, 1 medium (2-1/2" dia)Garlic, 3 tsp Rosemary, dried, 2 tbsp Olive Oil, 3 tbsp
Directions
Preheat oven to 350 degress. Quarter your yukon gold potatoes, and roughly chop your onion. In a deep baking dish add olive oil. Toss all of your ingredients. Cover with a tight lid or aluminum foil. Roast for about 45 minutes. Then bake with the lid off for another 15 minutes.

Salt and pepper to taste, serve!
