3 c. Quaker rolled oats (quick cooking works fine)1/2 c. brown sugar (unpacked)2 tsp baking powder1 tsp cinnamon1/2 tsp salt1 egg1 c. skim milk1/4 c canola oil1 tsp vanilla extract2 c. blackberries, fresh or frozen (or any other berry will do)
Makes 8 servings.
Combine all dry ingredients. Add wet ingredients to dry ingredients. Combine. Bake for 30-40 minutes, or until center is set.

This was good but it needs something drizzled over it to add a little more sweetness. I used honey, but agave nectar, jam or preserves, powdered sugar, or sweet cream should do the trick. - 9/10/10

I tried this today for my husband and myself. Found the recipe last night! It was very tasty, with the cinnamon and brown sugar, plenty sweet for us. But, found it to be a bit crumbly. We just added some cashew milk to it when it came out of the oven and it was delicious!! Thumbs up!! - 2/28/15

this reminds me of our baked Amish Oatmeal - we like the crumbly part! We put low fat canned milk (not sweetened condensed) on it after it baked and a bit of molasses instead of brown sugar. This was great! thanks for the oven tamp- LOL. AND this recipe needed NO high alt. adjustments. - 2/26/12
