Stuffed peppers

Ingredients
8 green or red or both bell pepper shells2 lb lean ground beef1 1/2 cups cooked brown rice1 can petite diced tomatoes2 eggs1 packet dry onion soupblack pepper to taste1 small can tomato sauce
Directions
Mix everything together except peppers and tomato sauce. Stuff into peppers. Should fill 8 good-sized pepper shells. Stand upright in pan and pour tomato sauce over. Add about an inch or so of water to pan around shells (no need to parboil pepper shells). Cover with foil and bake at 350 degrees F for about 45 minutes. Remove foil and continue baking for about 15 minutes, until brown on top. May serve with catsup or tomato sauce. Mashed potatoes or macaroni and cheese, peas and a green salad go good with stuffed peppers.
