Lightly Fried Yellow Plantain

1 Yellow Plantain with many black spots (the more black the better)1 TB Extra Light Olive Oil
Heat a nonstick skillet over medium heat. While skillet is warming, cut the ends off of the plantain. Carefully run the tip of a knife down the length of the plantain and peel the skin away. Slice the plantain diagnolly about a 1/4" thick.
When skillet is hot, add the oil and allow to heat up. Carefull place the plantain slices on the skillet. Allow to cook for 5 minutes on one side, then flip them over and allow to cook for 5 minutes on the other side.
