Curried Chickpeas with Cabbage, Apples & Almonds

Ingredients
2 Tbsp olive oil1/2 cup chopped onion1/2 cup sliced or slivered almonds3 cloves garlic1 can chickpeas, drained and rinsed2 tsp curry powder1/2 tsp coriander powder1/2 tsp salt1/4 tsp ground pepper1 1/2 vegetable broth2 cups chopped cabbage2 medium apples, peeled, sliced and chopped1/4 cup fresh cilantro (optional)
Directions
Heat olive oil in a large nonstick skillet over medium heat. Add onion, almonds and garlic and sauté 2 minutes, until nuts are golden. Add chickpeas and sauté 5 minutes.
Add curry, coriander, salt, and pepper. Stir and coat. Add broth; bring to boil. Add cabbage; reduce heat to medium-low and simmer 10 minutes, until chickpeas and cabbage are softened and liquid is reduced. Add apples and simmer 1 minute to heat through.
Remove from heat and stir in cilantro if desired.

Original recipes recommends serving with quinoa (not included in nutritional information). Our family almost always prefers rice, but any grain of your choice would certainly round out the meal nicely.
