Eggplant Burgers

Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb)Instant, Quick, and Regular Oats Cereal, .5 cup, dry, yieldsEgg, fresh, 1 largeBasil, 1 tbsp Parmesan Cheese, grated, .5 cup Olive Oil, 2 tbspOnions, raw, 1 cup, choppedThyme, ground, 1 tbsp Mustard, Spicy Brown, 1 tsp
Directions
1. Heat Oil in skillet or griddle on medium heat. Dice Eggplant and then add to skillet. Stir until Eggplant is soft. Remove and let cool. Then Mash.

2. In same pan, add sliced onions. Stir until medium brown and caramelized.

3. In a medium bowl, add all other ingredients, except mustard. Add eggplant stir until well blended. Form four patties.

4. Grill patties until brown on each side.

5. To compile burgers, place one patty on bread of your choice, top with mustard and caramiilzed onions.
