Black Bean Soup

Ingredients
2 tsp olive oil2 medium onions, chopped4 medium garlic cloves, minced1 small jalapeno, minced1 T ground cumin1 T chili powder12 ounce light beer(3) 15 oz cans black beans, drained and rinsed2 T lime juiceLow fat sour creamfresh minced cilantro
Directions
Makes 8- 1 cup servings.

Heat oil in large saucepan. Add onions and saute over medium heat until translucent, about 5 minutes. Stir in garlic and jalapeno and cook until garilc is golden, about 1 minute. Add a sprinkle of water if needed to keep from sticking. Add cumin, chili powder, and salt to taste and cook, stirring frequently, until spices are fragrant, about 1 minute. Pour beer and 1 cup water into pot. Bring mixture to a boil and simmer until alcohol aroma fades, about 3 miuntes. Add beans and bring mixture back to a boil. Remove 2 cups of beans from pan and puree in a blender. Return to pan. Stir in lime juice and salt to taste. Reheat if necessary. Serve soup in bowls, swirl with sour cream and sprinkle with cilantro.
