Quick Butter Chicken

1 BBQ chicken, in pieces2 Tbsp butter1 c. chopped onion2 tsp minced garlic2 tsp grated ginger1 tsp chili powder1/2 tsp ground tumeric1/4 tsp ground cinnamon1 540 ml can diced tomatoes2 Tbsp tomato paste1 Tbsp brown sugar (or Splenda brown)1 tsp salt1/2 tsp black pepper1/3 c condensed milk (or light gream)1/4 c yogurt (or sour cream)2 Tbsp chopped fresh cilantro
I use a ready cooked BBQ chicken from the grocery store in this recipe.
Melt butter in skillet. Sweat the onions in the butter. Add ingredients from garlic to black pepper and simmer with a lid on for 10 minutes. Add the chicken pieces, condensed milk, and yogurt and simmer for 5-10 minutes until chicken is warm. Add chopped cilantro at the very end. Taste and adjust seasonings.
Suggestion: serve with brown rice and Naan bread plus a green salad or steamed broccoli
