Broccoli/Ham/Mushroom Crustless Quiche

Ingredients
1 Tbsp Butter ½ C Chopped Onion1C Broccoli florets ¼ C Julienne Ham1C Sliced Mushrooms1-½ C Skim Milk5 Eggs1T Flour (or GF equiv. thickening agent)Dash Salt & Pepper¼ tsp Bottled Red Pepper Sauce¾ C Swiss Cheese grated
Directions
Preheat oven to 325F
Lightly grease a quiche dish or 7-8in pie plate

Melt butter over low heat in a medium fry pan. Add onion, broccoli and mushroom, sprinkle with 1/8 tsp salt. Cover and cook 10min over medium heat, stir occasionally. Add ham and cook uncovered 5 min or until all liquid has evaporated. Place cooked ingredients into prepared dish.
In blender combine milk, eggs, flour, ½ tsp salt, pepper and red pepper sauce and blend until smooth, pour over cooked veggies. Add cheese, stirring to distribute evenly..
Bake 45-50 minutes or until firm in the center, let stand 5-10 min.

    I made this for supper and it was very good! My husband enjoyed it, too Only change was I don’t like Swiss cheese so I used cheddar. - 6/29/21
