Maple Brown Sugar Granola Cookies

Ingredients
1 cup light butter, softened3/4 cup Splenda3/4 cup brown sugar2 tsp vanilla2 eggs1 1/4 cups all-purpose flour1 cup whole wheat flour1 tsp baking soda1/4 tsp salt3 cups Cascadian Farm organic maple brown sugar granola1 cup quick cooking oats1/2 cup chopped walnuts** Optional 1/2 cup chocolate or peanut butter chips (not included in nutritional informaiton)
Directions
Heat oven to 350 degrees.

In a large bowl, beat butter, splenda, brown sugar, vanilla and eggs until light and fluffy. Add in flour, baking soda and salt until well mixed.

Stir in granola, oats, nuts and chocolate/peanut butter chips (if using). Drop by large rounded spoonfuls about 2 inches apart onto an ungreased baking sheet.

Bake 11-13 minutes, until lightly browned on the bottoms. Cool 1-2 minutes on the sheet and move to a cooling rack.

Makes about 30 cookies.
