Onions, raw, .5 cup, chopped Green Peppers 0.5 cup, chopped Green onion .25 cup, 1 serving Flour (whatever you desire) .75 cup*Canola Oil, .25 cupChicken Broth, 2 cup (8 fl oz)Stewed Tomatoes, 1 cup Tomato Paste, .5 can (6 oz) Yellow Sweet Corn, Frozen, 2 cup kernels Ham, extra lean, (5% fat), 1.5 cup, diced Smoked sausage, 12 oz Pepper, red or cayenne,to tasteTabasco Sauce, to tasteSalt and pepper to taste***I cut a recipe in half for 6 servings instead of 12, I dont measure when I cook, so it was hard to put in the precise measurements. This is a cajun classic so measuring isn't a priority. There is ALOT of sodium if you use the chicken broth, you can use water instead, we like the flavor of the broth. Use low sodium if desired. We eat this with grilled cheese****
In a large dutch oven, saute onion, green pepper, and green onions in oil until tender, about 5 minutes. Add flour and cook until bubbly. Add chicken broth, stewed tomatos and tomato paste, mix well. Stir in corn, ham and sausage, cayenne pepper, salt and hot sauce, bring to a boil. Stir frequently, reduce heat, simmer, uncovered for 1 hour. Stirring occasionally.
