Ingredients
2 cups water1 clove of garlic, sliced1 inch of ginger, sliced1 tsp Soy sauce (tamari)1 Tbsp rice vinegar (unseasoned)1 tsp Fish Sauce (optional - add a bit more soy sauce if not using)0.5 tsp Sambal Olek (hot pepper paste)
Directions
Combine all ingredients (omit fish sauce if you're vegetarian) and set to boil for 10 minutes, covered. I chop my veggies and prep the tofu while it's boiling. Then remove garlic and ginger slices and pour over chopped veggies, wait 5 minutes and enjoy!

    This is a great tasting broth! LOVE IT with bean thread noodles, sprouts, and mushrooms, carrots and any veggie that sounds good. I missed the fish sauce when making it and it is great, next time will add it. Wonderful for such low cals!! thanks - 1/21/13
