Curried Egg Sandwiches

Ingredients
FILLING2 Fresh Eggs--Jumbo size1 large Onion1 large ripe red Tomato3 tbsps.Alfalfa Sprouts2 tbsps.finely chopped Celery1tsp.Coriander-Cumin Powder1tsp.Chilli Powder0.75 tsp.Mustard PowderSalt to tasteOTHER INGREDIENTS6 tbsps.Whipped Cream Cheese12 slices of Whole Wheat Bread

PREPARATION
Hard boil the Eggs and shell them.Blanch the Tomato and peel and puree it and strain the Puree to remove the seeds.Peel the Onion and boil it with finely chopped Celery together in a little Water.Add the Tomato Puree and continue cooking on a low flame till all the moisture dries up. Mash the cooked Ingredients together with the Seasonings,Alfalfa Sprouts,finely chopped Coriander Leaves and hard boiled Eggs till well mixed and smooth.Gently whip in the Cream Cheese and mix well.Spread evenly on the Whole Wheat Slices and make six square Sandwiches.Trim off the crusts from all four sides and cut into neat Triangles.Serve as a Snack with Tea.serves 4-6
