2 tablespoons ground flax 6 tablespoons water2 cups yellow cornmeal1/2 cup all-purpose flour, unbleached1/2 cup whole wheat flour4 teaspoons baking powder4 tablespoons white sugar2 tablespoons applesauce, unsweetened2 cups water1/2 teaspoon salt
Preheat oven to 450 degrees F (230 degrees C). Grease muffin cups or line with paper muffin liners.
In a small bowl, beat together ground flax and water. In a separate bowl, combine cornmeal, flours, baking powder, sugar and salt. Add flax mixture, applesauce and water; stir until smooth. Spoon batter into prepared muffin tins using approximately 1/4 cup for each muffin.
Bake in pre-heated oven for 15 minutes, until a toothpick inserted into the center of a muffin comes out clean.
