Muffin Tin Quiche

Ingredients
6 large eggs1/2 cup skim milk1 cup fresh spinach, chopped1 cup deli turkey sliced or diced1/4 cup + 2 tablespoons 2% Cheddar CheeseSalt and Pepper to taste
Directions
Preheat oven to 350. Line muffin tins with paper liners. Beat Eggs, skim milk, salt and pepper together. Divide spinach between 6 cups. Divide turkey between 6 cups. Place 1 Tablespoon of cheddar cheese in each cup. Pour egg mixture over and gently tap pan on counter to help settle ingredients.

Bake for 15-20 minutes, until cups are set. Cool on a wire rack.
