Eggplant Bacon (AFR)

Ingredients

1/2 lb eggplant, sliced into 1/8 inch half moons.2 T. tamari1/2 t. liquid smoke
Preheat oven to 425 degrees F.
Cut off stem and end from 1/2 lb. eggplant. Slice in half lengthwise. Slice into 1/8 inch half moons.
Place on a lightly sprayed baking baking sheet.
Cook for 8 minutes or until eggplant in brown and crispy in some places. It's okay if it's a little burnt! If you cut your slices a little too thick, this step will take longer.
Remove from oven. Mix smoke and tamari. Reduce oven heat to 350 degrees F. Dip eggplant slices in the mixture, place on baking sheet. Bake again for about 3 minutes or until heated through.
This is yummy! Isa serves it with her Caesar Salad, but I keep munching on it as is. Would be good as a side with scrambled tofu too!
