Quiche, Broccoli & Mushroom, 1/4 pie

Ingredients
1 cup chopped broccoli1 large carrot, sliced into 4 spears and chopped4 cloves of garlic, sliced1/2 cup sliced mushrooms1 Tbsp extra-virgin olive oil1 tsp salt, or to taste1 tsp black pepper, or to taste4 extra large eggs3 oz. hard cheese, grated1 9" pie crust
Directions
Preheat the oven to 400F(205C). Heat the olive oil in a skillet & sauté the vegetables with the salt. Remove from heat and allow to cool slightly. Beat the eggs & mix in the vegetables and the cheese. Pour mixture into pie crust and bake for 40 minutes or until well browned.
