Dolmades

Ingredients
For stuffing:1 cup Uncle Ben's Instant Brown Rice, uncooked1 lb ground lamb1 t. Allspice1 T. dried DillJuice of 1 lemon1/4 c. olive oilsalt and pepper to taste1 c. chopped onion1/4 c. chopped fresh parsley1 jar of grape leavesFor Sauce:2 eggsjuice of 1 lemon1 cup chicken broth2 T. water2 T. butter2 T. brown rice flour
Directions
Mix together all ingredients for stuffing. Rinse leaves and trim any stems. Stuff the leaves and put them in a single layer of a large pan with a cover. Cover with broth and lemon juice. Cover and simmer on low heat for 45 min. to one hour. Turn off heat and let sit for 20 min. before service with egg lemon sauce. To make sauce, make roux with brown rice flour and butter, add heated chicken stock and whisk until thick over med. heat. In bowl beat eggs with water and lemon juice. Remove pan from heat and when cooled, quickly add all egg mixture at once whisking continuously. Heat through while wisking but do not boil. Remove from heat when sauce consistency and serve over dolmades.
