joni's tofu quiche

.25 cup chopped onion1 Tbs miced garlic, or one galic clove ( just depends on what you have)2 tsp cold pressed olive oil3 cups fresh baby spinichsach of salt and white pepper ( season to taste)1 block firm tofu3 eggs.25 cup almond mmilk3 Tbs grated Parmesan cheese( optional)
preheat oven to 350o
baking time aprox. 60 min.
Heat olive oil in a large skillet. when oil is hot add garlic, oion, salt and pepper. saute till golden brown.
add spinich and cover until spinich is wilted. stir occasionaly so that the garlic and onion do not burn.
remove from heat and remove cover.
cut tofu in to chuncks and place in blender. add eggs and almond milk. blend until smooth and creamy.
pour liquid mixture in a large bowl and fold in spinich mixture.
spray a 10 inch pie dish and pour entire mixture in dish. srinkle 2 Tbs of parmesan on top of mixture and save aside the rest.
bake for 45 to 60 minutes in a 350o oven until top is golden brown and tooth pick comes out clean.
remove from oven and sprinkle the remaining parmesan on top.
let cool about 15 minutes before cutting.
makes 8 servings
you can add other veggies, bacon, sausage or what ever you favorites are to suite your taste buds or those you are serving... have fun with it... just remember that the base is the tofu, egg, almond milk.
