4 cups cilantro1 clove garlic1/4 red onion, roughly chopped1/4 cup pine nuts (or almonds, walnuts)6-8 tbsp olive oil1 tsp salt1 tsp pepper
Makes about 2 cups (8 1/4-cup servings).
Add cilantro, garlic, and onion to blender or food processor. Pulse 5-6 times (about 5 seconds each). Add pine nuts and pulse 2 times. While pureeing, slowly pour in the olive oil and puree until smooth. If the pesto is thicker than you like, add more olive oil, a tablespoon at a time until desired consistency is reached. Add salt and pepper and puree for about 10 seconds. If needed, add additional salt and pepper to taste.
