Curry Roasted Cauliflower and Squash

Ingredients
Butternut squash, cubed. 3 cupsCauliflower, cut into flowerettes. 3 cupsBrussels Sprouts. 2 cups (optional)Olive oil. 3 TCurry Powder. 2 TSalt to taste
Directions
Place olive oil, curry powder, and salt in a large baking dish. Mix well. Toss in vegetables and stir until coated lightly.

Bake at 400 for 45 minutes, stirring occasionally.

Makes 8 side dish servings, or 4 main course sized servings.
