Mushroom Barley Soup

Ingredients
2 cups water3/4 cup uncooked pearl barley4 medium onions, chopped fine2 celery ribs, chopped1 TBS olive oil4 cups fresh sliced mushrooms of your choice8 cups reduced sodium vegetable broth2 cups sliced carrots1 (6 oz) can of tomato paste1/2 tsp salt1/4 tsp black pepper1/2 cup minced fresh parsley1 can creamed corn
Directions
Place all of the ingredients except parsley in a large slow-cooker. Cook on high for 6-8 hours. Add parsley just before you serve.
