Ingredients
2 Tbl Extra virgin olive oil2 Tbl Balsamic vinegar1-2 cloves garlic, minced or crushed2 Tsp dijon mustardSalt & pepper to tasteSprinkle of dried herbs, optional
Directions
Emulsify the oil and vinegar either by wire whisk or shaking them together in a well sealed container. Add all other ingredients.

Makes four servings. Stores indefinitely in the fridge.

    This was very good. I used 2 cloves of garlic, but will use 1 next time. I didn't add any extra spices. I put this over a salad of lettuce, strawberries, sliced green grapes & feta cheese. Thanks. My whole family liked it too. Just wasn't sure what one serving was supposed to be. I figured 1 TBS - 5/19/08
