Red Bean Soup w/Plantains & Spinach

2 cans red beans2 cups water2 plantains, roughly chopped2 cups frozen spinach1 onion, diced1 tomato, diced1 1/4 cup fresh cilantro, chopped1 tbsp canola/olive oil blend1 tsp ground cumin1/2 tsp ground coriander1 tsp Goya Adobosalt & pepper to taste
1. Add oil to a large pot and heat on medium/high.
2. Add the chopped vegetables, cumin, coriander and adobo. Cook until tender.
3. Add the water, red beans, plantains, 1 cup cilantro and spinach. Bring to a boil then cover and lower to low/medium heat.
4. Allow to cook until the mixture thickens. Approximately 30 minutes.
5. Season with salt and pepper to taste.
6. Garnish with a sprinkle of the fresh cilantro
