Superfood Salad with Lemon Dressing

Ingredients
Salad Ingredients:Bulgar and Quinoa, Pedon brand 150 grams (uncooked)Summer Squash, 1 small, choppedRed Sweet Peppers, 1/2 cup, chopped Asparagus, fresh, 80 grams (about 8 stalks), lightly steamed and choppedBlueberries, fresh, 1/2 pintDressing:Honey, 1 teaspoon Juice from 1 Lemon
Directions
Boil quinoa & bulgar until done (10 minutes), drain, rinse & cool.
Chop vegetables into large bowl
Blend lemon juice and honey
Mix together chopped vegetables and quinoa
Add dressing

Makes 6 - 1 cup servings.
