German Spaetzle with Bacon & Cheese

1 c. flour1 tsp. ground nutmegdash black pepper1 tsp. salt2 eggs1/4 c. milk16 c. water5 slices bacon1/2 cup cheddar cheese
1. Mix together flour, nutmeg, pepper, and salt. Beat eggs well and add alternately with the milk to the dry ingredients. Mix until smooth.
2. Bring water to a boil.
3. Press dough, 1/2 cup at a time, through the holes of a colander, into the boiling water. Cook 3 minutes or until noodles rise to the surface. Remove with a slotted spoon and place in a strainer to dry. Repeat with remaining dough.
4. Meanwhile, cook bacon in a large skillet. Remove to paper towels and drain all but 1 tbsp. of bacon grease.
5. Add spaetzle noodles to bacon grease and saute. Crumble bacon and mix in with noodles.
6. Transfer noodles and bacon to a casserole dish and sprinkle with cheese. Broil for 5 minutes or until top is bubbly.
