Diet mayonnaise

Ingredients
* 1 Egg Yolk * 1 tbsp of Honey Mustard * 1 tbsp Cider Vinegar * 3-4 tbsp Sunflower Oil * Yogurt, plain, low fat, 3 cup
Directions
Put the egg yolk, mustard and vinegar in mixer bowl and mix, pour in oil slowly till mix gels. I've noticed it takes 3 to 4 tablespoons till that happens.

As soon as it starts gelling, pour in the yogurt, keep mixing. Once the mixture is smooth, add salt and pepper to your taste.

Refrigerate for 2-3 hours to get a thicker consistency.

This makes an excellent substitute to mayonnaise, tasty and still fairly low cal.

Hard to say how many servings it makes, it's all going to depend on how much mayo you use on things, but there were 8 of us eating meat fondue, and using this as a sauce for our meat, and we only used half of what I'd prepared!!!

Do not freeze though, mayo will just dissolve to an oily mess when thawed.
