Ingredients
1 serving brown rice1 serving reduced sodium black beans1 oz diced onion1 oz diced tomato1 oz diced green pepper1 c. cauliflower1 c. broccoli1 tbsp olive oil1 tbsp balsamic vinegar1 tbsp cumin1 tbsp garlic powder
Directions
Sautee vegetables in olive oil and balsamic vinegar
Once browned, add black beans, cumin & garlic powder
Cook rice as directed on box.
Add rice to vegetable/bean mixture until mixed. Serve hot.
