Gluten Free Chocolate Coconut Muffins

Ingredients
2 1/2 C Coconut milk1 1/4 white rice flour2 C shredded unsweetened coconut1/2 C sugar2 squares (56 g) semi-sweet baking chocolate squares (optional - 23 cal per serving)
Directions
1. Preheat oven to 375. Use metal cupcake liners (will stick with just spray) in muffin tin.
2. Melt chocolate with a little of the coconut milk in microwave. Mix together coconut milk, white rice flour, shredded coconut, sugar and melted chocolate. Spoon into liners (note: they do not rise at all so you can fill to the top).
3. Bake in preheated oven for about 30 min.

(chocolate can be left out for 23 less calories)
