Chicken rollup

Ingredients
* Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook) * Salsa, .5 cup * Cheddar or Colby Cheese, Low Fat, .25 cup, shredded * Iceberg Lettuce (salad), 1 cup, shredded or chopped * Flour Tortillas, 2 tortilla (approx 10" dia) * Sour cream, light, 2 Tbsp
Directions
1)Bake 1 chicken breast in oven on cookie sheet for 40 minutes, let cool.
2)Dice the chicken and mix in salsa and sour cream.
3)Add half of chicken mixture onto 10" tortilla, add half of the cheese and top with lettuce. Cut in half for easy eating.
4)enjoy :)

I did steps 1 and 2 the night before and ate it for lunch at work the next day.
