Red Chili Easy Enchiladas

Ingredients

4 Large Burrito-Sized Tortillas1 Cup of Shredded Cheese1 Can Red Chili Enchilada Sauce 10 Jumbo Black Olives1 Cup Diced Onions (I used green)0.25 cup Chopped Lettuce to top
Obtain a rectangular baking dish.
Spray dish with a little bit of cooking spray.
Chop up your onions, and olives into bite-sized pieces and place in a small bowl.
Pour just enough sauce to cover the bottom of the dish.
Fill each tortilla with desired amount of cheese, and 1/4 mixture of onions, and olives.
Roll each enchilada, and place in dish side by side.
Top with remainder of enchilada sauce and remainder of cheese.
Bake for about 10 - 15 minutes on 375oF.
Let cool about 5 minutes.
Top with lettuce and serve.
Maybe for a side dish do some fat free black beans :)
