cilantro mint lime dressing

Ingredients
DRESSING1 cup vegetable and/or olive oil - 4 tbsp olive oil, 4 tbsp vinegar1/2 cup lime juice - 4 tbsp lime juice1 cup chopped cilantro, packed, hard stems discarded - 1/2 cup 1/3 cup chopped mint, packed, hard stems discarded - 2.66 tbsp1 tsp red pepper flakes1/2 Tbsp salt2 Tbsp water
Directions
Combine all above ingredients in a blender and puree until smooth and emulsified, at least 3-5 minutes. Taste for salt and consistency. Add a touch more salt and water, if necessary. Transfer dressing to a jar, seal and chill.

Serving Size: makes 1 cup, each serving is 2 tbsp
