Slow Cooker Super Spicy Chili Con Carne

Ingredients
1/2 red onion, chopped1/2 red bell pepper, chopped8 medium mushrooms, cut into chunks3/4 cup chopped carrots1 lb. lean (90%) ground beef1 can black beans1 can kidney beans1 can tomatoes with chilis1/2 can low sodium beef broth1 tsp. red thai curry paste1/8-1/4 tsp. green habanero sauce2 tsp. garlic1/2 tsp. dried oregano
Directions
Layer the beef, vegetables, beans, tomatoes, and seasonings in that order in your slow cooker. Pour in about 1/2 a can of beef broth and cook on low for 6-7 hours.

This is a great make-ahead chili for a big party or to enjoy as leftovers for lunch!

Since serving sizes vary and I added too much broth to my original version of this, I just put the number of servings as 7. If you have enough for 8, there are about 190 cals/serving, and if you have just enough for 6, you have 250 cals.
