Vegan Oven Chickpea Stew

Ingredients
2 cans chickpeas2 cans diced tomatoes1/2 onion1/2 red bell pepper1/2 green bell pepper8 sno-cap mushrooms, sliceddash of olive oildash of lemon juiceparsleyoreganocuminsalt
Directions
Preheat oven to 350F. Combine 2 cans drained chickpeas, 2 cans diced tomatoes with juice, chopped onion, chopped peppers, and chopped mushrooms in oven-safe casserole dish. Add 2 cloves (or 2 teaspoons) minced garlic, dash of olive oil, dash of lemon juice parsley, cumin, salt and oregano to your desire. Pop into the oven for 45 minutes, and voila!
