1 lb. lean ground beef1 bag frozen mixed vegetables1 can tomato soup1 can tomato sauce1 head of cabbage1 can diced tomatoes, ie: del monte diced tomatoes with pepper and onion5 cups white or brown rice, cooked separate
In large pot brown and drain lean ground beef. Add frozen vegetables, tomato soup, sauce, and diced tomatoes (do not drain). Chop cabbage into 1 in. pieces and add to pot. Add about 1/2 a soup can of water to mixture. Mix and let simmer on medium heat, stirring frequently about 1/2 hour. Cook rice separately and add after 1st 1/2 hour of cooking. Mix rice with meat and veg. and simmer covered about 15 more minutes, or until cabbage looks to be fully cooked. Serve and top with low fat mozzarella cheese for added flavor.
You can add any spices or seasonings to the beef when browning for slightly different tastes.
