Sarah's courgette and chicken curry with brown rice

Ingredients
Directions
1 tsp each of cumin, coriander, chilli powder, turmeric and paprika6oz cooked chicken2 tbsp creme fraiche1 tbsp tomato puree2 tbsp groundnut oil3 cloves garlic3 medium courgettes, chopped into large chunks1 can chopped tomatoes2 tbsp peanut butter1 cup brown rice
mix the spice, creme fraiche and tomato puree.
Add the chicken
Chill for 10 minutes
pour the groundnut oil into a large pan
add the finely chopped garlic and courgette chunks.
Cook until courgette is soft
Add the tinned tomatoes and bring to the boil.
Add the chicken and all the marinade
bring back to the boil and simmer for 10 minutes
Add the peanut butter and mix well.
In the meantime, add the rice to a pan of boiling water and cook as per the instructions on the packet (20 minutes ish)
Serve with coriander leaves and naan bread
