Couscous ,Zucchini, Chickpea & Almond Salad

Ingredients
2 cups cooked couscous3/4 c roasted almonds chopped1 medium zucchini chopped & sauteed in olive oil3 scallions chopped1 can chickpeas rinsed ,drained3/4 c fresh peas3 tbs EVOO3 Tbs lemon juiceparselybasilsaltpepper
Directions
Cook couscous & bring to room temp, sautee chopped zucchini,
microwave peas in 1/4 c water for 2 minutes, drain & reserve pea liquid.
Add roasted chopped almonds to bowl of couscous, add chopped scallion, drained/rinsed chickpeas &other ingredients.
Mix pea liquid w lemon juice & extra virgin olive oil.
Salt pepper , basil parsley to taste.

Serving Size: This makes 6 one cup servings (packed)
