Ingredients
1 package active dry yeast (2.25 teaspoons).25 cup warm water (105 degrees to 115 degrees)1 teaspoon sugar.33 cup soy milk (110 to 115 degrees F).25 cup smart balance light1 egg1 cup all-purpose flour.5 teaspoon salt
Directions
Add all ingredients to mixing bowl, mix until smooth. Allow to rise until double about 45 minutes. Use crumpet rings (remove top & bottoms from water chestnut or tune cans). Heat flat bottomed skillet, cast-iron best. Place greased rings on skillet, add a tablespoon of margarine to each ring, when melted, pour 3 tablespoons batter into each ring. Cook about 7 minutes until tops are bubbly, remove ring and turn -cook another 1-2 minutes until second side browns. Serve warm or cool and toast before serving, freezes well.
