HG's Noodlicious Tofu Shirataki Soup

Ingredients
1 package Tofu Shirataki Spaghetti Shaped Noode Substitute2.5 cups fat-free chicken broth (I used reduced sodium)1 cup diced carrots and celery (about one stalk and one carrot)0.5 cup chopped onionsalt & pepper to taste
Directions
Place all ingredients except for Tofu Shirataki in a pot. Bring to a boil, and then reduce heat to low. Cover and let simmer for 15 minutes. Meanwhile, drain and rinse Tofu Shirataki thoroughly. Parboil for 2-3 minutes (or microwave for 1 minute) to reduce the authentic aroma, then dry very well. Once soup has simmered for 15 minutes, add Tofu Shirataki. Cook for an additional 5 minutes (uncovered), stirring occasionally. Add salt and pepper to taste.
