Paleo-Friendly Breakfast Sausage Patties

5 pounds ground pork1 cup finely chopped white or yellow onion8 cloves garlic, finely minced3 tablespoons ground sage2 tablespoons rosemary, finely minced2.5 tablespoons salt1 tablespoon fresh ground black pepper
Blend all ingredients together until seasonings are well-distributed through the pork. Using a small ice cream scoop, portion out 30 servings and press into patties. For freezing: lay out on cookie sheet with wax or parchment paper, using layers of paper between patties if you need to stack. Cover with plastic wrap and freeze until hard, about 2 hours. Remove from sheet pan and put into ziploc bag.
These can go straight from freezer to pan. Cook on medium heat in a lidded pan, about 6-7 minutes on each side.
