Spinach and Cantaloupe Salad

Ingredients
400g baby spinach Washed and dry 1.5 c Cantaloupe cut in ½” Dice1 T balsamic vinegar1 t Dijon mustard1 t honey3 T extra virgin olive oilSalt and pepper to taste
Directions
Wash and dry the spinach. In a bowl mix vinegar, mustard, and honey. Whisk in the oil. Place spinach in a large bowl. Add Cantaloupe, and dressing. Toss to coat. Add salt and pepper to taste if you like.
