Spiced Indian Cauliflower Soup

Ingredients
1 large potato peeled and diced1 small cauliflower chopped1 small onion chopped1 tbsp olive oil1 garlic clove crushed1 tbsp fresh ginger grated2tsp ground tumeric1tsp cumin seeds1tsp black mustard seeds2tsp ground coriander4 cups of veggie stock1 1/4 cups of plain yogurt
Directions
Put potato, cauliflower and onion with 3tbsp of water and the oil in a pot and let simmer for ten minutes. add the rest of the ingredients excluding the yogurt and let cool for 50 minutes on medium heat. stir in the yogurt and serve.
