Mock Oysters

Ingredients
1 can no salt added corn, drained & rinsed3/4 cup Egg Beaters1/2 cup white whole wheat flour1/4 tsp salt1/8 tsp pepper**optional: vegetable oil for frying**optional: 1/2 tsp sugar or splenda
Directions
In medium size bowl, combine eggs, corn, flour, salt & pepper. Stir until mixed. Spray a large nonstick skillet with Pam and bring to medium heat. Spoon corn-egg mix into pan to make 3 x 2 inch ovals (about 1/4 cup batter each). Fry only as many as will fit, without touching until golden; turn & fry on other side until center is done -- about 3 minutes on each side. Keep warm until all are fried, adding spray to skillet as needed. **note: you can also "stir-fry" and make this more like a version of scrambled eggs.

Serving Size: makes approx 4 servings of 2 "fritters" each
