Chicken Dijonnaise

Ingredients
4 Chicken breasts, skinless, boneless1/2 Tsp salt1/2 Tsp pepper1 Tsp fresh thyme1 Tbsp olive oil4 Tbsp finely diced shallots1/2 Cup diced onion1 Cup sliced fresh mushrooms6 Oz dry white whine1/2 Cup low sodium chicken stock1 Cup half and half cream1 Tbsp dijon mustard1 Tbsp corn starch1/4 Cup waterSprigs of fresh thyme
Directions
Mix salt, pepper and thyme together. Season chicken breast with blend.
Saute chicken breast in olive oil until outside is lightly browned.
Remove chicken from pan and set aside on plate.
Put pan back on stove on high heat
Add chopped shallots, onions and mushrooms.
Add wine, chicken stock and dijon mustard.
Blend in half and half cream and return chicken to the pan.
Reduce heat and simmer for 15 minutes.
Combine corn starch into 1/4 cup water.
Stir into chicken and sauce until thickened.
Garnish with sprigs of fresh thyme.
