Chicken Breasts En Croute

zest of 2 lemonszest of 2 oranges3 garlic cloves, peeled and minced6 tablespoons of minced fresh parsley1 cup of grated parmesean2 teaspoons of olive oilsalt and pepper to taste2 eggs, stirred together4 5oz skinless boneless chicken breast halves, pounded to 1/3 inch thickness
Preheat oven to 400 degrees Farenheit, and line a baking sheet with aluminum foil.
in a shallow bowl, combine the first 7 ingredients (herbs, zests, parmesan and oil)
Dip each chicken breast in the egg mixture, allowing excess to drip off and then dip in the citrus-parmesan mixture, pressing lightly to coat each side.
Place breasts on the baking sheet and transfer to oven
Bake for 20 minutes or until cooked
Serve with Lemon slices and a green salad.
