Roo's Black Bean Hominy Vegetarian Chili

Ingredients
Vegetable Broth, 4 cupsCanned Tomatoes, one 14.5 oz can, diced*Canola Oil, 1 tbsp Onions, raw, 1 large diced*Peppers, sweet, red, fresh, 1 large dicedChili powder, 3 tbsp Cinnamon, ground, 1 tsp *Cumin seed, 1 tbsp Oregano, ground, 1 tsp Bush's, Black Beans, 2 cans drained & rinsedHominy, 2 cans drained & rinsedGarlic powder, 3 tsp *Chocolate, Baker's Select, Bittersweet 70% Cocoa baking squares, 1.5 oz Cilantro, raw, 1/3 cup chopped
Directions
Bring broth and tomatoes to low simmer. Meanwhile, in dutch oven or soup kettle, heat oil over med high heat. Add onions and peppers and saute until tender and lightly browned. Add dried spices and stir for about 2 minutes. Next add means, hominy and broth. Bring to a simmer, then reduce heat to low and continue simmering, partly covered until veggies are soft and mixture has thickened to "just about" desired thickness. Last, add chocolate and cilantro, turn off heat, let sit for 2 or 3 minutes, then stir.
