Chicken Curry

Ingredients
2T coconut oil2 onions, chopped6 cloves garlic, pressed4T yellow curry powder2t ground ginger2t cumin30 ounces chicken breast4T tomato paste2-15 oz. can coconut milk
Directions
Melt coconut oil in skillet.
Add onion & garlic and saute until onions are translucent.
Add all spices.
Add chicken, stir fry until chicken is done.
Stir in tomato paste.
Add coconut milk.
Simmer 6-8 minutes, until sauce has thickened.
Serve over rice.
