Gorgonzola cream sauce

Ingredients
2 Tablespoons gorgonzola cheese1 cup heavy cream1 Tablespoon butter1 Tablespoon shallot
Directions
Heat butter and cook shallot until transparent (four minutes). Add cream, simmer, and reduce (10 minutes). Whisk in cheese and serve on pasta or with steak. A very little goes a long way.
