Feta and red pepper quiche

8 fresh eggs1 cup onion, chopped2 cups spinach1 cup red peppers, chopped1 oz. feta cheese1 clove garlic, minced1 tbsp olive oilsalt and pepper, to taste
Preheat oven to 325 degrees. Grease a 9x9 clear pie pan. Beat eggs in a bowl and set aside. In a saucepan over medium-high heat, throw in garlic, onion, and pepper until slightly tender. Throw in spinach and cook until slightly wilted (only takes a minute or two!). Remove pan from heat. Combine eggs, feta, and veggie mix in the saucepan and transfer to pie pan. Add salt and pepper to taste. Cook in oven at 325 degrees for about an hour, or until eggs set.
