chicken fried rice

Ingredients
roasted skinless chicken breast, about 3 oz1 cup white rice, cooked .5 cup chopped onion.5 cup chopped celery1 clove garlic, chopped1-2 Tbl. extra light olive oil1 tsp. ground ginger1 egg, beatenchopped lettucesoy saucesalt and pepper to taste
Directions
saute onion and celery in oil til translucent, add garlic and saute a little more, add chicken cut into pieces, ginger, and soy sauce and stir and heat; add rice and mix w/meat and veggies until thoroughly heated through. make holes in mixture and pour in egg, scramble in pan, then mix into rice mixture. Add lettuce and stir til slightly wilted. Serve. Great with pineapple salad.
